Abstract

Cardiovascular disease (CVD) remains a major contributor to health care expenses. Studies in both humans and animals have demonstrated that increased intake of dietary nitrate can improve endothelial function and provide protection against the development of CVD. This study investigated whether long-term dietary nitrate supplementation could attenuate the progression of CVD and associated metabolic disease. The findings have for the first time, demonstrated that nitrate can potentially prevent the progression of atherosclerosis and CVD. Although the mechanisms have not been fully elucidated, this appears to be in part due to enhanced endogenous and exogenous NO bioavailability and activity.
