Abstract
Australia has an established home market for sheep milk products because of its significant ethnic population. Products traditionally sought are cheeses and yoghurt. There is also a large international market and a strong overseas demand for disease-free milking sheep, which eventually can be supplied from Australia.
The Australian sheep dairy industry is currently centred on Victoria, with 7 dairies, and one each in South Australia, Western Australia and New South Wales.
