Abstract

The studies presented in this thesis confirm earlier data in demonstrating that increased nitrate intake can acutely lower blood pressure. They also found that blocking nitrate reduction to nitric oxide leads to elevated blood pressure. A sustained increase in nitrate intake did not result in lower blood pressure. However, a higher nitrate intake was associated with lower risk of cardiovascular disease mortality in a cohort of older Australians. The findings from these studies are consistent with emerging evidence that dietary nitrate provides a positive contribution to human cardiovascular health.
