An investigation of the antioxidant activity and phenolic constituents in Western Australian honeybee products

Abstract

This study focuses on determination of total antioxidant activity (TAA), identification/quantification of phenolic compounds and the contribution of individual constituents to the TAA of WA honeybee products. It details the optimisation/validation of assays to determine total phenolic content and TAA of honeybee products and their application to the analysis of WA honeys and bee pollen. For the latter extraction protocol preceding analysis was also optimised. Based on a comprehensive review of phenolic honey constituents a novel HPTLC-derived database for their identification was developed/validated. So identified phenolics in WA honeys were quantified and those with antioxidant activity visualised using HPTLC-DPPH bioautography.
