FTIR spectra of germinated wheat flour.
Incubation time: FTIR spectra of wheat flour from grain incubated at 4 degrees Celsius, submerged in water, for different lengths of time.
Incubation trial 1-4: FTIR spectra of wheat flour from grain (Wyalkatchem 2016) at different times after overnight (15 hour) incubation at 4 degrees Celsius, submerged in water.
Sprouted grain FTIR: FTIR spectra of wheat flour (Wyalkatchem 2016) milled from different percentages of sprouted grain. Grain sprouted by incubating in water at 4 degrees Celsius for 15 hours.
Measurements taken using an Agilent Technologies Cary 630 ATR-FTIR analyser.
A background calibration was performed before each measurement.
